ONION PIE

  1. 1.1/4 cups ritz cracker crumbs
  2. 4 tablespoons butter, melted
  3. 2 cups vidalia onions, thinly sliced
  4. 2 tablespoons butter
  5. 2 eggs
  6. 1/3 cup milk
  7. 3/4 teaspoon salt
  8. dash pepper
  9. 1 cup grated sharp cheddar cheese

DIRECTIONS FOR ONION PIE

  1. Mix ritz cracker crumbs and melted butter.
  2. Preheat oven at 350 degrees.
  3. Press mixture into a pie plate and place in the oven for 10 minutes, save 1/4 cup for later.
  4. Saute onions with 2 tbsp. butter until clear, not brown; spoon into pie crust.
  5. Beat eggs with milk, salt, and pepper.
  6. Add cheese to the mixture and pour over onions.
  7. Sprinkle with paprika.
  8. 1c of water.
  9. Place into the pressure cooker for 15 min. then NPR for 10 min.
  10. Sprinkle with remaining crumbs.
  11. Place back in the oven for 10 min. let cool for 15 min. for slicing.
